Moosewood has been putting out some amazing recipes and cook books for many years now and this carrot ginger soup has been one of my favorites for quite a while now. For a Vegan version just omit the cream and drizzle a little olive oil on top. This is a great recipe to keep in mind when you see a great sale on carrots at the farmers market as well.
