Steamed Multi-Colored Carrots with Orange Dill Butter Sauce

Lately I have been buying several of these beautiful organic multi-colored carrots.  Honestly I wish I could just buy a whole of just the red ones.  How fun are red carrots?  This may be a crop that I need to consider in the garden this year.  Until then I'm happy I can buy them at the local stores, even the big chain grocery markets.

The citrus from the oranges combine really well with the savory flavors of melted butter and dried dill.  And of course Dill and carrots go together like... well dill and carrots.

The coolest part of these is that when you cut them the inside is a different shade than the outside so they have these cool bulls-eye patterns in them.


To make these you'll need a few things....

1 1/4 Pounds of multi-colored carrots, peeled and halved lengthwise.

4 tsp Fresh Orange Juice

2 tsp orange zest

1 tsp dried dill

2 TBSP Butter

1.  Place the carrots in a steamer for about 7 minutes, or until just tender.  Transfer to a large bowl and toss with the rest of the ingredients  Season with Sea Salt and pepper.
