Usually one thinks of French Cuisine as being heavy with meat and farm fresh vegetables. There are some great Vegetarian varieties out there and this is one that I just fell in love with.
"Quenelle" is a light dumpling usually made with fish or ground meat but this version is wonderful. They remind me of large (and lighter) Gnocchi. While they are light they are also very filling.

The one trick is that the semolina dough needs to cool for about 2 hours so you need to be aware of the prep time as this is not something you would likely whip up on a Monday night. It was well worth the wait and time though. The sauce was delicate but extremely flavorful from the fresh herbs. I would have thought that this came from an Italian region initially.
Serve this with a light salad and it's the perfect date night meal.
