I know it seems like a snooze for a food blog to post a baked Potato but seriously, is there anything better tasting than a crispy salty skinned potato that has been baking for an hour in the oven? During the busy work week I tend to zap a potato in the microwave and I've almost forgotten that taste of a real baked potato with a crispy outer skin and soft buttery center. I can't even say this is a true recipe but my God people, find the time to bake a potato! It will take about 60-75 minutes but during the weekend when you're home cleaning or doing chores, toss some potatoes in the oven. They actually retain their taste even reheated. Clean and dry some potatoes and prick them all over with a fork. Bake directly on the oven rack (no need for aluminum foil!) at 350 for about an hour or until soft.
The amount of topping choices are endless but I prefer a traditional topping. Instead of Sour Cream which I think melts too quickly try combining some Greek Plain yogurt with some chives or green onions.
Greek Yogurt and Green Onion
Layer a pad of butter on the potato and a dollop of Sour Cream or Yogurt and you've got a great main dish or side. Topping are endless and don't worry about the carbs! This is a great vegetable full of nutrients.
